Food Poisoning - Part II

In this blog I will list for you the next culprit in food poisoning... the parasitic.
The following are when you are invaded by parasites from eating tainted foods.
• Pork tapeworm-This tapeworm lives in the human intestine and measure approximately 8-10 feet in length. It is caused by poor sanitary conditions where pigs may have access to human feces and ingest them. The eggs will hatch inside the pigs, invade their intestinal walls and eventually be carried into the pigs muscle. When the pig is slaughtered and portioned it then goes on the market. When we buy the meat or get it in a restaurant we must always be sure that it is well done. Heating the microscopic larva eggs will only make them grow before we ingest them but cooking the meat thoroughly will kill them.
• Toxoplasmosis- this is caused by a parasite that lives in the intestine in cats. It is transferable to other animals and humans. When other animals contract these parasites they get into their muscles, which is another reason to cook your meat thoroughly. This includes lamb and beef.
• Trichinosis- It is cause by an intestinal worm and the larvae which live in the flesh of pigs, dogs, cats, rats, various other animals as well as marine animals. Usually humans contract it when they eat hamburger that is mixed with pork, homemade sausage, wild game, and horse meat. The sickness of this disease varies; some people only may be mildly sick while other many become horrifically ill and then there are those who will die from this.

So, what I need to remember is all meat must be cooked thoroughly... Sushi have to set aside...
