Cattails, those plants that look like hotdogs on a stick, usually grow in marshy areas. Most people would never think that this type of plant could be edible not to mention medicinal. Before these long flowers turn brown and begin resembling a hotdog, while they are still green, you can use them as a very healthy vegetable. They can be cooked like corn on the cob or even roasted. The stalks can also be eaten either raw or cooked depending on your tastes. The stalk provides some relief for rattlesnake victims according to natives and the plants in general are high in vitamins, calcium and potassium.
